Confectionary Production Manager - Ferzol

About the role

Daher Foods, an international FMCG company founded in the Lebanese Bekaa Valley, is looking for a Biscuit, Wafer and Cake Production Manager for its Ferzol facility. The manager leads and manages production operations on biscuit, wafer and cake lines, ensuring targets for quantity, quality, cost-efficiency and safety are met, and that food safety standards and efficient use of manpower, raw materials and machinery are maintained.

Key responsibilities

• Plan and run daily, weekly and monthly production schedules with planning, procurement and inventory teams, adjusting to demand, raw material availability and equipment performance.
• Supervise production across the three lines, optimise processes to improve yield and reduce waste, and track key metrics and continuous improvement.
• Control production budgets (labor, utilities, overtime, raw materials, overheads) and set annual manufacturing objectives.
• Manage production supervisors, team leaders and operators, including shift allocation, succession planning and skill development.
• Oversee machinery performance, preventive maintenance, and work with the maintenance team to minimise downtime; support equipment upgrades and CAPEX projects.
• Ensure compliance with HACCP, GMP and ISO 22000, conduct audits and inspections, lead incident investigations, and authorise immediate production stoppage when needed.
• Work with Quality, Engineering, Warehouse, Planning and Procurement, and report performance, incidents and improvement plans to senior management.

Required profile

• Bachelor's degree in Food Engineering, Food Technology, Industrial Engineering or a related field.
• Minimum 7-10 years in food manufacturing, preferably in biscuit, wafer, cake, bakery or high-speed FMCG production, including 3-5 years in production leadership.
• Expert knowledge of biscuit, wafer and cake manufacturing processes.
• Fluency in Arabic and English, spoken and written.

Required skills

• Strong understanding of HACCP, GMP and ISO 22000.
• Advanced proficiency in ERP, MES, Excel and manufacturing performance dashboards.
• Analytical, budgeting and capacity planning skills.
