Executive Chef

About the role

The Executive Chef will lead all culinary operations for an Accor hotel, ensuring food safety, high‑quality standards and guest satisfaction. This senior position combines culinary expertise with strong financial and team‑leadership responsibilities.

Key responsibilities

• Lead overall culinary operations, food safety and hygiene in line with HACCP and local regulations.
• Set and monitor P&L budget, forecast, and monthly financial reports, identifying deviations from the business plan.
• Develop and update SOP manuals, policies and service standards for the culinary department.
• Create new menus and conduct detailed costing analyses to support product development.
• Supervise senior culinary team, ensuring high‑quality output while controlling food costs and gross profit.
• Collaborate with the Chief Steward to maintain clean and orderly kitchen areas.
• Participate in management meetings, contribute to the annual business plan and ensure expenses stay within budget limits.

• Strong interpersonal and communication skills to lead, influence and build trust among team members.
• Ability to manage performance, motivate staff and uphold property policies consistently.
